Sweet Rice Cake is a traditional Chines desert. It is usually served during Chinese Lunar New Years. In Chinese, it is called “Nian Gao”, people use similar pronunciation to symbolize good luck for the future. I love the taste of the sweet rice cake, so I bake it anytime during the year. All of my friends love my recipe. Here I want to share my recipe with the one who loves REAL Chinese food.
Sweet Rice Cake Recipe:
Ingredients:
- 1 can coconut milk (400 ml)
- 1 cup milk (240 ml)
- 3 eggs
- 1/2 tsp baking powder
- 3 tsp butter – melting
- 1/3 cups sugar
- 1 cup Craisins (dried cranberries )
- 1/2 red bean paste
- 1 cup walnuts
- 1 bag sweet rice flour
How to make it:
- preheat oven to 375 °F.
- mix coconut milk, milk, eggs, butter, sugar, baking powder together, add sweet rice flour, mix smoothly then add Craisins mix together.
- baking pan spray oil.
- put the mixture into baking pan, scoop red bean paste into the mixture, make sure they are sinking done, then add walnuts on the top.
- baking:
- 375 °F bake 25 min.
- then, 400 °F bake 20 min.
- take out of the oven to cool.
When it is totally cool, cut it and enjoy it!
