Lamb meatballs

I got some organic grass fed ground lamb from ALDI the other day. I decided to make some lamb meatballs for dinner tonight.

Ingredients for meatballs:

ground lamb: 1 lb

sweet onion: 1/2 (medium size), chopped

egg: 1 raw

green onion: 3 leaves, chopped

pink salt: 1tsp

black pepper: 1/4 tsp

EVOO: 1 tbsp

mix all the ingredients in a bigger bowl, make 12 pieces meatballs

preheat oven 400 F, put meatballs in a baking pan, bake for 20 min.

ingredients for sauce:

chicken broth: 2 cups 1/2 bottle

Bertolli Organic Sauce Olive Oil: 1/2 bottle

sweet onions: 1/2 diced (medium size)

fresh tomatoes: 3 (small wined), cut to quarters

carrots: 2 sliced

pink salt: 1 tsp

cumin powder: 1/4 tsp

thyme (dried): few pieces

mix all the ingredients in a sauce pan, high heat to boil, put meatballs in the pan, low heat for 15 min

when serve, put chopped green onion leaves on the top. Yum!
